Cube 3 lbs pork belly, season with BBQ rub. Smoke at 250°F for 2 hours, toss in sauce and brown sugar, cook 1-2 hours more until caramelized.

Chef's Tip: These "meat candy" cubes have crispy edges and melting centers. The key is patience for proper rendering.
